The Importance of Timing

Five days after roasting is the first day you should consider drinking coffee – we call this ‘Day 1’. Our aim is to deliver your coffee as close to Day 1 as possible.

Controlling Heat and Gas

So much about great coffee revolves around controlling heat and gas. When we pick coffee and let it air dry – a natural process – it has a profoundly different effect on the final taste than, for example, a special anaerobic or carbonic macerated process, where we deprive the raw bean of oxygen (see Cherry Bombe & Dram Drops).

Managing Gas During Roasting

Gas control doesn't stop there. During the roasting process, gases inside the bean expand and crack the bean's cell wall – known as ‘First Crack’. Careful management of heat and gas continues until the perfect roast profile is achieved.

The Role of Degassing

But there's more. After roasting, coffee beans continue to emit carbon dioxide and other gases. If you try to brew coffee too soon after roasting, it can seriously impact the flavor profile – and not in a pleasant way. This is where degassing comes in. Degassing is about allowing just the right amount of time (between 4 and 10 days, depending on the bean/roast) for carbon dioxide to escape. Degassing is the reason coffee bags have one-way valves; without them, the bag would inflate like a pillow when filled with fresh coffee beans.

Finding the Sweet Spot

The sweet spot for coffee is approximately 5 days after roasting, and it should be consumed within 6 weeks. After that, coffee begins to lose its peak flavor – it's still more than drinkable, but let's say it's past its best. Check the roast dates on your coffee to ensure you're enjoying it as fresh as you'd like.
